No words/pumpkin spice cookies

Have you ever had the opportunity to share your thoughts, or lighten someones day, but given the time, and your mind goes blank? Or how about that prepared speech, or lesson perhaps, that doesn't quite come out the way you intend. That would be me tonight. I haven't written in a few days, and it would seem that I have more than plenty to talk about, and I do. Unfortunately though,  it's all scrambled in my mind and I can't seem to put it all together. So I decided that I wouldn't try, because sometimes when you try to hard,  it doesn't come out right, and it all sounds like a bunch of gibberish. 


All day today my thoughts shifted from one thing to the other, this thought was this, and that thought was that. I know, I'm getting you all confused and ready to click on the little x box at the top of the page; bare with me. I know what I love, and I know what makes me happy, and sometimes I don't have to go into detail every moment of every idea. So today, I'll  go to what I know works best for me.

With all that said, my goal here is to cook, and create somewhat healthy, but delicious treats for all to enjoy. 

And I hope you do.

Pumpkin spiced chocolate chip cookies

The process

Mix the wet ingredients

Pretty

Sift the dry ingredients

Blend them together

But don't forget the chocolate chips

Spoon it like you mean it!

Pumpkin spiced chocolate chip cookies:


Ingredients

1 cup applesauce(I used tree top, no sugar added)
1/2 cup white sugar
1/2 cup packed brown sugar
2 Lg eggs
1 tsp vanilla extract
1 can pumpkin puree
2 cups all-purpose flour
1 1/2 cups whole wheat pastry flour
2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp all spice
1/4 tsp nutmeg
2 cups quality milk chocolate chips

Directions:

Heat oven to 350

With hand mixer in large bowl blend applesauce and sugars until incorporated. Beat in eggs one at a time. Mix in vanilla and pumpkin. In medium bowl sift flour, soda, salt and spices. In thirds add dry ingredients to wet; mix until smooth. Add chocolate chips and combine. With a heaping tablespoon put on greased baking dish or one lined with parchment paper. Bake for 9-12 minutes. Transfer to cooling rack. 

Sometimes you don't need a lot of words to describe your heart, mind and soul. Sometimes a picture can show you all there is to know about every aspect of your life.


And what a gift it is to be able to sit back, and enjoy what you see, and maybe share it sometime later.
