Sunday Grub

I wont drag you to far down my childhood, but to help you understand where my Sunday ideas and traditions come from, and some that have been changed, I must  give you a little history.


As long as I can remember my Sunday's included, church, pot roast, and lots of Televised Golf. I actually liked watching Golf with my dad (not because I liked golf) but rather it was the perfect sport to snuggle up on the couch to and fall asleep. It got me every time.


We would come home from church, kick off our shoes, and I would offer whatever help I could  for mom before planting my tush on the sofa.


My mom would be slaving away in the kitchen and the smell of roasted whatever in the air. Sometimes a little crackle from our wood burning stove would take you far in snugly Ville.


These memories that I grew up with were expected to pass on to my own family. However, as I got older, my own family was clearly different from the one I grew up with. I had to improvise. Some things I wasn't willing to change, but others, well, I just had too.


Church: I had moments in my life where it wasn't a priority, or maybe I couldn't find the right one. I suppose I didn't feel the need to go. Somehow though, I found myself planted firmly, and this distant memory was now part of my life. "Church" isn't just a place where I confess all my wrongs and walk away set free. This is part of my family and while every Sunday doesn't send me jumping through the rafters, I always walk away a little more inspired, a little more encouraged and a little less anxious about the coming week.


Golf: How can I explain this. I don't watch Golf. Simple as that.


Roast: I suppose a few times I prepared a Sunday meal my mom would have been proud of, but for some reason I just haven't grounded that tradition. Maybe I'm just lazy on Sundays. Maybe when I get home, I'm expecting that miraculously there will already be the smell of roasted something in the oven. Maybe I don't want to make roast. 


I like simplicity after church, that's just who I am. I get pretty excited with myself when I take a slice of simple and make awesomeness. 


Or........... maybe I just don't have the ingredients to make what I really want. It's Sunday after all.


This Sunday though, I came home and checked my messages, looked at my favorite foodie sites and landed on The Enchanted Cook. Always great recipes, and today's post happen to be an easy dish. I closed up my computer, tore open the fridge like a mad women and to my luck, no tortillas. 


DANG!


I improvised.


I  didn't even come close to making what she did, but I will. It looked delicious. It looked like my kind of Sunday Grub. Check it out!

What I did make however was a concoction of things (and inspiration) that turned out to be delightful and the perfect Sunday lunch.


Surprise in a Nest




I call this  "surprise in a nest" because you can't really tell what's hidden under that rich cheddar cheese.


The process


4 day old French rolls




Scoop out the insides.


Place on sheet pan and drizzle with olive oil.


Crack one egg in each nest and season well with salt and pepper and bake.


Shred cheese and chop parsley.


Reserve and toast the leftover bread.


Sprinkle baked nests with cheese and parsley and bake until melted.


















Surprise in a Nest


Ingredients


4 quality eggs
4 day old French rolls
3/4 cup quality cheddar cheese
handful fresh parsley
olive oil
1 Tb butter
salt and pepper


Directions


Preheat oven to 350


Take the four French rolls and slice in half. Scoop out the inside flesh but careful not to poke a hole through the other side; Reserve inside. Place on foil lined baking sheet and drizzle with olive oil. Crack one egg in each nest. Season with salt and pepper, place in the oven and bake for 20 minutes or until whites are firm but yolk is slightly runny.


Meanwhile, heat a small nonstick skillet over medium heat with 1 Tb butter. When butter is melted, add the reserved bread pieces. Cook until lightly browned and slightly crispy.


When eggs are set, remove from oven and sprinkle each nest with cheddar cheese and parsley.  Put back in the oven just until cheese is melted. Put a few toasted bread pieces on top. Serves 2-4 depending on how hungry you are. 


Note: You could also serve this alongside country style potatoes or a nice green salad.

  4. I also remember the coveted Sunday supper. A tradition my Mom continued after we all moved out. We all returned Sundays for supper. We don't hold up her tradtion well. She really was the glue that held it together.
    We have started new traditions for Sundays and it has been a nice change. Sometimes I still do a pot roast though, just for old times sake! These little bundles look wonderful! Thank you for sharing!
